For the Greek in you...

Impress your guests at your next get-together with this easy spanikopita recipe:

1 bunch of Scallions, finely chopped

2 1/2 pounds of Spinach, chopped

2 Cups Feta Cheese, crumbled

1/2 Cup Parsley

2 Eggs, beaten

3 Tbsp Olive Oil

2 Tsp minced Garlic

8 sheets Phyllo Dough

1/2 Cup Butter, melted

Preheat oven to 350 degrees F

Lightly Grease a 9x9 pan (Olive Oil Cooking Spray is fine)

In saute pan, place oil, garlic, parsley, and onions until brown.

Add Spinach until soft.

In a bowl, mix eggs and feta.

Mix hot and cold ingredients in bowl.

In 9x9 pan, place one sheet of phyllo dough, then brush butter on top. Do this with four sheets.

Place mixture on top of sheets. With the remaining four sheets, complete the butter/dough alternate again. Fold the dough over the filling, basically "tucking it into itself, so the sides are all covered.

Bake for 35 minutes or until golden. A clean fork means it's finished cooking.

Cut and serve!
