Cocktail Party Snacktime!

We recently sponsored the Fort Lauderdale Chamber of Commerce for the Pride Center's annual School Supply Drive Happy Hour. With over 70 attendees, the children in our local schools are going to start their year off right!

Here's how you can make your own Asian Lettuce Wraps. The photos pictured are in the description:

Bibb Lettuce, cut at the stem and separated - It has a great crunch, is drier than iceberg, and holds the toppings together

Meat:

Chicken, Grilled and cut into strips - We found it stays in the lettuce better than when it is diced

Ground Beef - An all purpose seasoning works just fine, with the option of diced white onions which adds to the flavor

Toppings:

Carrots, Shredded

Bean Sprouts

Red Cabbage, Shredded

Mangos, peeled and diced

Scallions, Chopped

Sesame Seeds

Sauces:

Sweet Red Chili Sauce -

2 red jalapeno peppers

1 red bell pepper

1/2 Cup White Sugar

1/2 Cup Water

1 Tbsp White Vinegar

1 Tbsp Honey

Cornstarch, to thicken

Garlic, if desired

Depending on how much heat you like, keep or take out the seeds from the peppers as needed.

Blend Peppers, Sugar, Garlic, and Water.

Place in pan on low-medium heat.

Add White Vinegar and Honey, and stir

Once the sauce is hot, add a little cornstarch at a time to thicken. Add more water if it thickens too much, as the water will just evaporate.

Thai Peanut Sauce -

1 Can Coconut Milk

1 Cup Peanut Butter (spend a little extra and get the natural kind, with the oily part on top)

1/2 Cup Sugar

Pinch of Salt

1 Tbsp White Vinegar

1/2 Cup Water

Mix all ingredients in medium sauce pan over medium heat, stirring occasionally.

Let simmer for around 5 minutes.

Let set at room temperature, and serve!

Of course, your group will probably be smaller, but serving everything individually adds personality to your display.
